Vegetable Lasagna

I do not remember where I got this recipe many years ago. I like this meatless option, but not everyone I cook for does, so I like to have it on hand for when a vegetarian dish is needed or serve it as a sidedish.

Ingredients:

  • 1 tablespoon oil
  • 1 small onion, chopped
  • 2 cloves garlic, crushed
  • 1 carrot, sliced
  • 1 stalk celery, sliced
  • 2 cups mushrooms, sliced
  • 1 sweet red pepper, sliced
  • 1 - 28 oz (796 ml) can whole tomatoes
  • 3 cups broccoli, chopped
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • salt, pepper to taste


  • 9 lasagna noodles (whole wheat -optional)
  • 1 carton (2 cups) cottage cheese or ricotta
  • 1 egg
  • 1/4 cup fresh chopped basil or 1 tsp dried basil
  • 1/3 cup grated Parmesan cheese
  • 6 cups (approx) grated mozzarella cheese


Method:
  1. Cook noodles according to pkg directions. Cover pot loosely with lid to drain most of the water, add some cold water to cover the cooked noodles while they stand.
  2. Cook onion, garlic, carrot, celery and mushrooms and red pepper for about 5 minutes. Add tomatoes (cutting through them with spoon) and seasonings. Simmer 10 minutes adding broccoli near the end. Set aside.
  3. In a small bowl, mix cottage or ricotta cheese, egg, basil and Parmesan.
  4. In a 9x13 inch Pyrex pan, layer 3 noodles, 1/2 the vegetable mix, 1/2 the cottage cheese mix and 1/2 of the mozzarella cheese. Repeat and finish with noodles and cheese on top. cover with aluminum foil and bake at 350° F for 30 minutes. Uncover and continue baking about 10 more minutes or until cheese is melted and bubbly.

  6. I just want to thank you ladies for the blog you have put together. I stumbled across it while looking for a recipe for pumpkin donuts (which I will definately by trying). I have now browsed over quite a few of the recipes and I will be using a lot of them. I like that they are recipes that can be actually used. It seems like a lot that I come across just seem a little "out there" and not useful to me. THANK YOU FOR PUTTING RECIPES IN THAT ARE DELICIOUS AND USEABLE!!

  8. I have a vegetarian lasagna that uses spinach. I haven't had it for a long time (since I live by myself now & have a teeny tiny freezer). Maybe on the wknd I'll make it up & have it next week for lunch!

  12. I seem headed more and more back to a vegetarian lifestyle...wonder if it has to do with age...grin! At any rate...this recipe has all the fixings of a great lasagna....one that even meat lovers would LOVE!

  13. I know this is a year later, but I made this for dinner last night and it was a big hit. I splurged on nice quality Italian noodles and I noticed - they were luscious and easy to handle too.
    I found a warm kidney bean salad recipe online + other vege dishes to round out a delicious and satisfying meal. Our son is engaged to a lovely gal who happens to be vegetarian so we're adding lots of good, new meal options to the repertoire. Thanks for helping me out!!

  14. I made this lasgana lastnight. Incredible!!! So good :) I used Ricotta and didn't have parmesan cheese in my fridge like I thought, so just used a little Kraft three cheese Italiano in the ricotta mixture. It was all good :) I will be making this one again!

  15. I added ground beef (seasoned with taco seasoning) to this because my boyfriend won't eat a dish without meat :) He loved it! And so did my dad :)
