Riverwalk Guacamole

One of the most famous attractions of Texas is the Riverwalk in San Antonio. It's a great place to stroll or take a riverboat cruise...and there are restaurants galore to pick from. We just returned from a visit to Texas and a wonderful time on the Riverwalk. Memories of the guacamole will live on!




We walked by a Bistro where they were making fresh guacamole at the table and before long we found ourselves sitting at one of their tables. Who can resist? We ordered a 'guacamole-for-two' salad, prepared right at the table. It was good to the last lick and I would have liked to order another...and another! But instead I had the server explain exactly what she was doing and have already enjoyed my copycat guacamole at home.

Ingredients:
  • Juice of 1/2 of an orange
  • Juice of 1 lime
  • 2 avocado, pitted and scooped out of skin
  • 1 small Roma tomato, diced
  • 2 tablespoon diced red onions
  • 1 tablespoon chopped cilantro, or to taste
  • 1/2  teaspoon coarsely ground sea salt
Directions:
  1. Squeeze juices into bowl.
  2. Add avocado and coarsely chop.
  3. Add onions, chopped tomato,and cilantro...fold into avocado mixture.
  4. Add salt.
  5. Result should be crudely chopped not mashed.

That’s it. I think the key is to getting avocado that is at it's peak; it should be a little dark-skinned and somewhat soft when squeezed.

  7. I have to confess, I'm a middle-aged woman and I have NEVER liked to cook. Well, never till I found your blog. I've been following for the last couple of months and you guys are great! And oh, I love Guacamole..... and bread, and the cookies, and the biscuits..... Keep on posting, these recipes are ALL keepers. Ok, off to the market for fresh tomatoes!

  10. I'm so glad you enjoyed your visit to Texas and the Riverwalk is where my husband and I celebrated our anniversary a couple of years ago. It was nearly Christmas and the lights were beautiful.

    I've never put orange juice in guacamole, but it sounds good.

  12. For me, Guacamole is the ultimate comfort food. And I need a lot of comforting! Just a bowl and a spoon... that's all I need. I think the orange juice sounds wonderful.

  15. I like to make guac in a metate. I picked mine up at a Mexican market for like $3.

    But, I'm a purist. My favorite type of guac is coarsely mashed (with a fork) avocado, salt, and a bit of lime juice. That's it. If I must, I'll put a tiny bit of tomato and onion in, but I think cilantro overwhelms the perfection that is a ripe avocado. (They are ripe when you gently tap the stem, and it falls off; when underneath it is brown, not green; and the skin, when pressed, gives a bit but not too much. Not all avocados are black when ripe.) I might try a shot of orange juice along with my lime next time, that sounds interesting-- but not that much, that's too much liquid for my tastes!

    Of course, I'm spoiled. I get free avocados from friends' trees all summer...

  18. Judy, my DIL taught me to make guacamole, and she also said to chop the avocados as opposed to mashing them. Apparently the flavour is better when they are chopped. Except for the orange juice and cilantro, my recipe is similar. It's always a hit.
