The cookies are crisp and freeze wonderfully. These can be made with raisins instead of chocolate chips. . and the nuts can be eliminated as well. Use your imagination with the add ins. .
- 1 cup butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs beaten
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups rolled oats
- 2 cups Rice Krispies
- 2 cup chopped walnuts
- 1 cup shredded coconut
- 1 cup chocolate chips/or raisins
Optional
- 1 cup candy coated mini eggs
- Cream together butter and sugars
- Add the rest of the ingredients in order given.
- Bake at 350 F for about 12 minutes or until golden brown.
The dough can be easily mixed with a handmixer until you begin to add in oatmeal and the remaining ingredients. Then it is better to switch to a dough hook or finish mixing by hand.
