Overnight Whole Wheat Waffles

When our family comes for Sunday brunch I often make this batter first thing in the morning or the night before and keep it in the refrigerator or if they are calling when they are on their way, I let it sit on the counter.  The timing works wonderfully to make the batter and then start the vanilla custard and berry sauce.

 While you are working on the custard sauce and berry sauce you can easily put a bag of hashbrowns in the oven on a cookie sheet to bake.   Stir them once in awhile to crisp them and  and have bacon ready to put in the oven in a single layer on parchment paper for 20 or until crisp.

  • 1/2 cup warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 2 cups of milk
  • 1/3 cup melted butter
  • 2 large eggs or 3 small ones
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 1/4 cup white flour
  • 1 1/4 cup whole wheat flour
  1. In a large mixing bowl, combine the yeast, warm water, and sugar. Allow to sit for about 10 minutes and until puffed.
  2. Add the milk, melted butter that has cooled a wee bit, the eggs and tablespoon sugar and the salt.
  3. Using a mixer, combine on medium speed until smooth.
  4. Add the flour and mix slowly until combined.
  5. Cover and refrigerate overnight, or let stand on the counter several hours.
Bake the waffles in a hot waffle iron until the steam stops.

Custard
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • dash salt
  • 2 cups of milk
  • 2 egg yolks
  • 2 teaspoons vanilla
  1. In a microwave safe 4 cup measuring cup, combine the sugar and the cornstarch and salt.
  2. In a small bowl, beat the eggs, and add the milk.
  3. Stir with a whisk the milk and eggs into the sugar mixture.
  4. Cook in the microwave at one minute intervals , stirring with a whisk until it is boiling.
  5. Add the vanilla, stir well, and cover with plastic wrap and allow to cool until serving time.
Berry Sauce
  • 3 cups of mixed berries
  • 1 tablespoon cornstarch
  • 1/2 cup sugar
  1. Mix the sugar and the cornstarch in a small bowl.
  2. Add 1/4 cup water to the frozen berries
  3. Heat in the microwave at one minute intervals until the berries thaw.
  4. Add the sugar and cornstarch.
  5. Continue to cook in the microwave until bubbly and slightly thickened.
  6. Allow to cool until serving time.

  7. One of our favorite brunch recipes and yes, if there's a crowd, you need two irons. Happy to know that T contributes to the waffle making process.
    Like you said, You make them hot and ready and never in advance.

    It's next best to homemade.

  12. Okay, this is the only way to have waffles!! I ordered a waffle for breakfast while we were on vacation and it came looking so plain with just some strawberries on it and maple syrup on the side. Tasted quite plain too! And it coast $15. I said to my Hon "can you imagine that when I make 10 waffles for our family that it's like making a $150 meal? Being forever complimenting, he said it was worth more.
    By the way, I love the fact that you can make this recipe ahead of time, then you can just get up and have them ready to cook.

    Can you tell me how many waffles this recipe will make? Do you double this to feed your big family or this is enough for everyone?

  14. Jen . ..I make this with other brunch items. . bacon and eggs and hashbrowns and then I feed 6 adults with the recipe. We fill our waffle iron at least 5 or 6 times.

  16. Taking a shortcut on the sauce, I have used Bird's Custard Sauce for all the waffles I make for my family. Its super easy, and if its left over? it eats like pudding! Available at the grocery store.

    1. I think it should work Lorrie. Just mix it with the flour before adding to the liquids. There is no need to make the liquids hot as the instructions on the yeast package. Let us know how they worked out.

  20. Hi Lovella - I've made waffles many times before and they usually come out a bit soggy, not very crispy. I even warm them up in my toaster but they become dried out. Does your recipe produce a crispy waffle?

    1. These waffles are crispy when they are hot out of the waffle iron but would probably lose their crispness if they sat for a few minutes...so let the family wait for the waffles instead of the waffles waiting for the family. We enjoy these waffles everytime. Let me know what you think.
