Farmer Sausage Corn Chowder

  • Another family favourite, it is the soup I often take to families when they need a loving touch.

  • 1/2 ring smoked farmer sausage or 3 cups cubed smoked ham
  • 1 large onion, diced
  • 2 - 3 stalks celery, diced. 
  • 2 diced bell peppers
  • 5 medium potatoes,  peeled if not white thin skinned and then diced
  • 3 sliced carrots 
  • 2 -3 cups fresh or frozen corn kernels
  • 1 teaspoon salt and 1/2 teaspoon ground pepper
  1. Saute the sausage or ham in a soup pot.
  2. Add the onions and celery and fry until the veggies are softened.
  3. Add 5 -6 cups of water to the pot.
  4. Add the rest of the veggies. . .adding the corn last.
  5. Allow to simmer until all the veggies are tender.
I do this mid afternoon, put it on a very slow simmer, barely simmering and leave it be until nearly dinner time when I add the cheese sauce.
Cheese Sauce
  • 1/4 cup butter melted
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups grated cheese (cheddar or mexican blend)
  1. Stir together melted butter and flour in a 4 cup measuring cup.
  2. Add milk and whisk until well combined.
  3. Heat a minute at a time in the microwave, stirring well after each minute until the sauce is thickened and bubbly.
  4. Add cheese and stir to melt.
  5. Add the sauce into the soup and bring to a very low simmer and then serve immediately.

  2. I love this website and have already made several dishes. I am also Menn. background. What, though, is farmer sausage and what are the substitutions other than smoked ham? Keep up this wonderful source of recipes. I love it.

  3. oh boy farmer sausage is a smoked sausage usually made of just pork or a pork/beef combo. It is made mostly in British Columbia and of course in Winnipeg where most of the Canadian Mennonites settled. Does any one have any other suggestions for substituting Ham? I'm at a loss here too.

    1. You can also buy Mennonite Farmer style sausage at Superstore and it actually tastes quite delicious. For the ham I would just replace it with the same sausage

  5. This looks like my kind of soup!
    I'm almost embarrased to say that the only way I've made corn chowder is a very quick (sort of like a cake mix idea) way! For a quick lunch that comes in handy, but this one, with some Zwieback added, is a nice hearty dinner! I need to go and stock up on some farmer sausage.
    About the substituts for farmer sausage . . .like you said, any pork sausage, really, even long European wieners would do (I would just add them in with the veggies, however.) Also bacon could be used.

  6. We received an ice cream pail filled with this soup 3 years ago from you when my Mom died. It came with lots of love and support at a sad time. We all loved it and the recipe was copied by all. I pull this one out more than any other soup recipe at this time of year. I always get my farmer sausage at Remples, a place not too far away, but yesterday while in Super store looking for hot italian sausage for pizza I saw Winkler farmer sausage. I have also bought a ham steak for this soup and cubed it. This soup looks like an Autumn welcome. Kathy

  7. Oh...I was sooooo going to make corn chowder soup this weekend and nice to see it posted. But I make mine all vegetarian so this is interesting..... looks beautiful and yummy for these cold rainy days. By the way...where I live there is 'no Remples' or near anything like that so I too get my sausage from Superstore...and their own no name brand farmer's sausage is really quite good...of course, not as good as the home smoked we used to get in Saskatchewan....sigh

  13. Lovella, this is one GREAT looking recipe! I'm going to give it try, although I'll have to use the smoked ham version, since Farmer's Sausage isn't available in the deep south. Thanks for mentioning that it is a great recipe to take to families when they need a loving touch. I know someone in that very situation this week, and I was looking for the perfect way to say I care.

  18. To make this soup 'gluten free' - leave out the flour. If the soup needs thickening - add 1 - 2 cups of 'Idahoan Instant Mashed Potatoes' (they are gluten free). This works really well for thickening any creamy soup.
